What this counts, and what it leaves out
- Revenue per order = the average ticket you enter. Food = ticket × food cost % × (1 + waste %); packaging is a flat amount per order.
- Card fee and royalty apply to every ticket. App commission applies to the app share only. Driver cost applies to the own-delivery share only. The two delivery shares together cannot exceed 100%.
- Fixed costs = paid staff hours × open days × wage × (1 + payroll taxes) + rent + utilities + other + your pay. The loan is the startup cost less your cash in, amortised at the rate and term you enter.
- Ramp: volume climbs in a straight line from your month-one level to full over the months you enter. Cumulative cash starts at minus your cash in; payback is the first month it is zero or above.
- Not modelled: seasonality, game-day spikes, a second location, equipment replacement, income and sales tax, lease terms beyond monthly rent, permits, tips, catering, alcohol sales, and any price, yield or market figure. Every number comes from you.
Common questions
How many pizzas does a pizzeria need to sell to break even?
Divide monthly fixed costs (staff, rent, utilities, your pay and the loan payment) by what each order contributes after food, packaging, waste, card fees, delivery-app commission and your own driver cost. The report gives the orders a day with and without the loan.
How much do delivery apps cost a pizzeria?
The commission comes off the orders that go through the app, so a 27% commission on 15% of orders is about a 4% cost on every ticket. The tool charges it only on the app share you enter, and charges your own drivers only on the own-delivery share.
What food cost percentage should a pizzeria have?
This tool does not tell you; it uses the food cost percentage you enter. Pizza shops commonly quote figures near a quarter to a third of the ticket, but yours depends on your suppliers and menu, so measure it from your invoices.
What average ticket do I need for a target profit margin?
The report solves for the average order ticket that reaches your target net margin at your entered volume, after every cost and the loan payment, and says plainly when no ticket can reach it.
How much cash do I need while sales ramp up?
The ramp table runs sixty months with volume climbing from your month-one level to full. The lowest cumulative cash point, beyond what you spent at opening, is the working-capital reserve to hold.
